"Create" ... Cajun Chicken Shrimp Pasta

We are lovin' this dish.  Easy to prepare and wonderful flavor.  Oh yeah...did I say it tastes FANTASTIC?  Oh Yes.

CAJUN CHICKEN PASTA 
Makes 6 servings


6-8 boneless skinless chicken thighs
6 tsp cajun seasoning, adjust to taste
3 tbs butter
1 small diced onions
2 c. sliced mushrooms
6 tbs chopped sun-dried tomatoes packed in oil
2 clove minced garlic
3/4 tsp salt
3/4 tsp dried basil
3/8 tsp pepper
3 tbs flour
14.5-oz can chicken broth
2 c. half and half
3/4 c. parmesan cheese
12 oz linquini noodles cooked al dente

Cook pasta. Toss the cajun seasoning with chicken. Grill chicken and let rest 10 min. Meanwhile, melt butter in skillet, add onions and cook till transparent. Add mushrooms and garlic. Cook a couple of min. and then add tomatoes and seasoning. Once mushrooms are done, add flour and cook 1 min. then work in chicken broth. Cook until thick and then add 1/2 & 1/2 and sliced chicken. Toss with cooked pasta and parm. cheese. Add pasta water if it needs to be thinned.  To save calories - use 1 c. 1/2 & 1/2 and use an extra cup of broth in it's place.

**Cajun Chicken Shrimp Pasta -- We also like to add shrimp.  Before you add pasta, throw in uncooked, shelled shrimp and it will cook in the hot sauce in a few minutes.  YUMMMMM
