"Create" ... Cashew Broccoli

Sometimes our "Create"-ion might be a comfortable environment for our family.   Making sure the clothes are washed and house is clean.  I do...however, like to award myself.  Clean and wash one day so I can dive into crafting the next.  Now it's time to dive....

I served this last night along side Tilapia Fillets, Royal Brown Rice w/ Portabello Mushrooms, and Whole Wheat Bread.  We love the sauce on this and it goes well on Roasted Asparagus or  Green Beans.

Broccoli w/ Garlic Butter & Cashews
Makes 6 servings

1 1/2 lb fresh broccoli
1 T. butter
1/2 tbs brown sugar
3 tbs soy sauce
2 tsp white vinegar
1/4 tsp freshly ground black pepper
2 clove minced garlic
1/3 c. chopped salted cashews

Place the broccoli in a large pot with about 1" of water in bottom. Bring to boil and cook 7 min. or until tender crisp. Drain and arrange the broccoli on a serving platter. While the broccoli cooks, melt the butter in a small skillet over med. heat. Mix in the b. sugar, soy sauce, vinegar, pepper, and garlic. Bring to a boil, then remove from the heat. Mix in cashews and pour the sauce over the broccoli. Serve immediately.
