This SOUR CREAM COFFEE CAKE is so tender, it melts in your mouth...so flavorful, you'll go back for another...and so easy, you'll be making it often. This is a great "give to my neighbors" dessert.
1 c. butter
2 c. sugar
2 c. flour
1 tsp baking powder
1/4 tsp salt
1 c. sour cream, I use fat free
1 tsp vanilla extract
Topping: 1/4 c. pecans, chopped
2 tsp cinnamon
3 tbs brown sugar
Cream together butter and sugar. Add eggs, beating after each egg. Sift dry ingred. together and add alternating with sour cream. Add vanilla. Grease and flour pan. Spoon 1/2 of the batter in pan. Sprinkle with 2/3 of the topping. Spoon rest of the batter in and sprinkle with remaining topping. Bake 325 for 50-60 minutes. Cool 10 minutes and remove from pan. Can drizzle glaze on top.
