"Create" ... Crock Pot Pork Barbacoa

Okay...so easy...so amazingly yummy.  Dump in the pot, turn it on, and go to your scrapbooking room and have some fun.

Pork Barbacoa
2 1/2 - 3 1/2 lb pork loin roast
1/2 c. dark brown sugar
1/2 c. worcestershire sauce
1/2 tsp oregano
1/2 tsp ginger
1 tsp salt
1 tsp chili powder
1 tsp garlic powder
2 tbs dried minced onion

Put in crock pot and cook 4 hrs. on high. Shread. Then add
1 can red enchilada sauce

Serve in flour tortilla with rice and beans, topped with more enchilada sauce and cheese.  Broil to melt cheese.  BEWARE...it's amazing!!!!!
